Yes they can be changed. You have to pull the motor and take it all apart. Jeremy did a nice tutorial on installing the bearings on his ruckus he put a motor from a yamaha in, it would probably be very similar. Anyway, do you have the manual for it? I believe you are going to have to pull it all apart, crack the case open to get the crank out, and while it is out make sure there is no damage to it. Jeremy's how to. scooterrebels.proboards.com/index.cgi?action=display&board=otherreadonly&thread=838

you will more then likely need to have a few special tools 1 a puller to get the flywheel off and a case spliter once in a while you will get lucky and can get the case off without a spliter getting the old bearings out may not be that bad the hard bart would be if you have a race on the crank that needs to come off
you can use the freeze and heat method or check what some of the local shops charge to press new bearings on i dont know if there is a crank upgrade for your engine but now would be the time to consider it if there is even if you are staying stock

Practicing on a crapper motor is an excellent idea, never hurts to have done it before and see what problems you might run into.
Yes the rollers will wear, if you are tearing the whole thing apart I'd certainly replace anything that might be worn, just so you don't have to tear it apart again in a few weeks or even days. Replace all bearings, the rings (then would be the time to put a BBK in) replace the drive belt, hoses, fuel filter, replace any part that might fail. You can start piling up parts now so you don't have to buy them all at one time.
